Wood... Did someone say, "wood"...

 

WARNING:  Never use soft woods as they can ruin your cooker. Every bbq wood mentioned here will be good for bbq pit smoking as long as the wood has been thoroughly dried. Not all green woods are bad, use extreme caution when smoking with green woods as most tend to make the BBQ meats taste bitter. Not all green woods leave a bitter taste.

Wood is best with?

Hickory Wood

The most popular Smoking Wood. Hickory Wood has a strong, smoky taste. Mixes well with Pecan Wood and Apple Wood. Very clean to burn.

Good with all meats.

Mesquite Wood

The Choice Wood of Texas. Mesquite Wood has a very distinct, heavy smoke taste. Mesquite Wood has a super high heat output but burns relatively fast.

Great with all meats. Perfect with beef, pork, fish, poultry, lamb and veggies.

Oak Wood

A heavy smoke flavor. The second most popular smoking wood. It is one of the longest burning woods, and it burns very hot.

Red meat, pork, fish, and some wild game.

Red Oak Wood

The best of the red oaks are far superior to white oak for any cooking.

Excellent on Ribs, good with everything.

White Oak Wood

White Oak Wood makes the best coals for longer burning.

Red meat, pork, fish, and some wild game.

Post Oak Wood

A type of White Oak, with a little more heat than white oak.

Red meat, pork, fish, and some wild game.

Pecan Wood

Nice taste. Lighter than hickory. It is one of the cleanest of all wood types to burn and it tends to burn very long.

Good with almost anything.

Wood is best with?

Pear Wood

Nice subtle smoke flavor. Much like apple.

Excellent with chicken and pork.

Maple Wood

Smoky, mellow and slightly sweet.

Good with pork, poultry, cheese, and small game birds.

Mulberry Wood

The smell is sweet and is very similar to apple.

Beef, poultry, wild game, and pork

Sassafras Wood

It has a very unique spicy flavor. Don’t go overboard with it though, known to cause side effects in some people. Recommend mixing 1 log of sassafras to every 3 logs of oak.

Wood is best with?

Acacia Wood

Similar to mesquite, but not as strong.

Most meats. Most veggies. Good with beef.

Alder Wood

Very delicate. Slightly sweet.

Fish, pork, poultry.

Almond Wood

A nutty, sweet flavor.

Good with all meats.

Apricot Wood

A Sweet Fruit Wood thats flavored milder and sweeter than hickory.

Great on most light color meats, including chicken, turkey, pork and fish.

Ash Wood

Burns fast. Light but distinct flavor.

Red meats and fish. Wonderful for Venison.

Birch Wood

Slightly sweet.

Good with pork and poultry.

Cedar Planks

Place planks directly on the coals 15 minutes before you put on your meat. The planks will burn, but the results are well worth it. They should be soaked overnight in olive oil or water.

Great for grilling fish.

Cottonwood

It is a softer wood than alder and very subtle in flavor. Use it for a hotter fire but mix with other woods (hickory, oak, pecan) for more flavor.

 

Crabapple Wood

A sweet fruity wood that produces good smoke. Versatile as Apple but with it's own distinctive flavor.

Beef, poultry, wild game, and pork.

English      Walnut

Very heavy smoke flavor, usually mixed with lighter woods like almond, pear or apple. Can be bitter alone.

Good with red meats and wild game.

Grapevines

Tart, but provides a lot of smoke. Rich and fruity. Similar to other fruit woods like Orange and Lemon Wood but with a stronger fruit flavor.

Good with: poultry, red meats, wild game and lamb.

Grapefruit Wood

Mild to Medium smoke flavor. Slight hint of fruit.

Good with beef, poultry, and pork.

Lemon Wood

Mild to Medium smoke flavor. Slight hint of fruit.

Good with beef, poultry,  and pork.

Lilac  Wood

Very light, subtle smoke taste with a hint of floral.

Good with seafood and lamb.

Nectarine Wood

A Sweet Fruit Wood thats flavored milder and sweeter than hickory.

Most light color meats,         including chicken, turkey, pork and fish.

Mulberry

Sweet, tangy, blackberry smoke flavor

Pork, ham, poultry,  game birds

Orange Wood

Produces a nice mild to med. smoky flavor.

 

Peach Wood

A Sweet Fruit Wood thats flavored milder and sweeter than hickory.

Great on most light color   meats, including chicken,         turkey, pork and fish.

Plum Wood

A Sweet Fruit Wood thats flavored milder and sweeter than hickory.

Great on most light color   meats, including chicken,  turkey, pork and fish.
